It’s not rocket science, honey - watermelon, cucumber, celery, and mint are super sexy, super juicy, cooling foods that hydrate, keep us juicy and help us beat this summer heat.
Here’s a super simple recipe for a Cucumber Watermelon Salad that will cool you the f*!ck off AND feed your goddess with its gorgeousness:
INGREDIENTS 🍉
1/4 c. extra-virgin olive oil
2 tbsp. red wine, champagne or apple cider vinegar
1/2 tsp. Himalayan or celtic sea salt, or to taste
3 c. cubed seedless watermelon
1 c. medium cucumber, peeled and chopped
1 c. crumbled sheep feta or vegan substitute (optional)
1/2 c. red onion, thinly sliced
1/2 c. coarsely chopped mint
Pinch of flaky sea salt to sprinkle over the top, if you have it.
DIRECTIONS🥒
* In a small bowl, whisk together olive oil, vinegar, and salt.
* In a large serving bowl, combine watermelon, cucumber, feta, red onion, and mint. Add dressing, toss to combine.
* Top with more mint (and flaky sea salt)
