Wow - it's cold!❄️I think winter's finally here!


As promised, I'm back with a smile and some simple, straightforward tips for winter wellness -- so you can feel your radiance shine, even when it's cold and dark.


Winter is the perfect time to focus on our self care. The weather alone gives us a great excuse to slow down, cozy up, give ourselves a bit of our own attention and nourish our beauty.


One of the things I love most about winter is warm comfort food.😉


At my house, winter time = soup time!!


Feed your winter radiance with soup

Not only is soup pure cozy in a cup, it can be one of the most nourishing, budget-friendly and beautifying meals EVER.


Soup is comforting, easy to digest and supremely nourishing ... and when it's made with collagen-rich broth and vibrant orange squash, it suddenly becomes a true DIY tonic for our immune system and a serious beauty elixir.


Here is a very simple recipe for winter beauty soup guaranteed to feed your glow, warm you up from head to toe and give you a cozy feeling in every spoonful.


Not only is this soup beautiful to look at, it's bursting with immune enhancing spices, healthy fats, antioxidants and vitamins A and C!


So, cozy up and enjoy a steaming bowl of this creamy, dreamy, delicious soup. Not only will it feed your winter wellness, it will help soften and nourish your skin ... and even boost collagen production😃


Vibrant Winter Beauty Soup

4 tablespoons coconut oil or butter, or a combo

1 onion, chopped

3 cloves garlic, minced

2 cups (16 oz)100% pumpkin puree, cooked fresh pumpkin or cooked butternut/winter squash of your choice

3 cups collagen-rich chicken bone broth (or low sodium vegetable stock)

1 cup full fat coconut milk, half and half, or milk of your choice

½ teaspoon salt

1 - 2 teaspoons fresh grated ginger or about ½ teaspoon powdered ginger

½ - 1 teaspoon turmeric (careful, it stains)

⅛ teaspoon red pepper flakes


Instructions:


Heat oil in a large pot over medium heat and add onion and garlic. Cook until onions become translucent and garlic is fragrant but not burnt.


Carefully stir in the spices and cook for 1 minute.


Add the broth. Bring to a gentle boil, then turn the heat to low and simmer for about 15 or 20 minutes,


Stir in pumpkin squash and let it cook through, about 5 -10 minutes. Stir it often.


Slowly stir in milk and cook another 5 minutes or so.


Puree until smooth. taste and adjust all of those spices to your taste - or add a few of your own. Thanks to Karen, who gave me this recipe, I love to add curry to this soup!


You can make it even prettier by sprinkling some pumpkin seeds on top before serving😉


I think I could live on soup, a big salad and ... yes, I'm gonna say it....good bread!
